Ingredients:
2 tins of chopped tomatoes
6 large carrots (chopped)
2 big onions (chopped)
1 courgette (chopped)
2 veggie oxo cubes dissolved in 1 litre boiling water
good shake of paprika
salt and pepper to taste
Method:
Place all ingredients in a large pan and bring to the boil on the hob, cover, simmer for 30 minutes. Take off the heat and cool slightly then blitz with a blender. Eat some and keep some (the recipe makes enough to serve at least 4 people heartily, probably more…)
Serve with freshly baked wholemeal rolls for a delicious lunch.
Suitable for vegetarians
(tastes great, M even asked for a bowlful mid afternoon as a snack!)

That looks good. Should be low in calories too. I’ll have to try it. Was just saying to Ruth that I think I need a kick up the jaxi from you succesful slimmers to help me loose my excess

Good way to get veg eaten too, if one’s children don’t like, (not a problem here luckily) I can’t see any noticeable courgette. Looks restaurant worthy.
My paprika is about 50 years old and smells of …nothing. Will definitely have a go at this.

The boys are both getting better at eating at veg since we moved, but even so it’s a good way of getting some that they won’t eat any other way (like onions) into them…
J and I made up a second batch for lunch - I was a bit overzealous with the paprika though and we all have scorching mouths and fires in our bellies. Just the thing when the wind is howling outside the patio doors, lol!
